5-Minute Mini Pumpkin Muffins

Pumpkin-flavored everything is all the rage, but how many recipes offer pure pumpkin magic with just two ingredients? Here’s a 2-ingredient recipe for pumpkin muffins that will take you 5 minutes to prepare.

First, let’s talk numbers. Not only are pumpkins delicious — but they’re also nutritious. According to this 2018 “Healthy Living” article in SFGate, a one-cup serving of pumpkin puree supplies:

  • 3.4 grams of iron, a mineral that helps keep you from getting sick by supporting a strong immune system.
  • 7.1 grams of dietary fiber.
  • 1,906 micrograms of vitamin A, which boosts your immune system and keeps your eyes, bones and teeth healthy. 
  • 15 percent of your daily vitamin E needs from a serving of pumpkin puree. Vitamin E keeps your immune system working and also protects your cells from damage that can lead to certain types of disease, such as cancer.

The article goes on to suggest that carotenoids, the compounds that give pumpkins their bright orange hue, are powerful antioxidants that can prevent several types of cancer, including lung, prostate and larynx cancer. Additionally, eating carotenoid-rich foods may also lower your risk of heart disease, stroke and hardening of the arteries.

Easy Pumpkin Muffins

And now for the good stuff: The easiest pumpkin recipe ever that contains just two simple ingredients. These pumpkin muffins come out extremely moist (despite not having added oil) and aren’t loaded with calories. 

Ready? Here you go: 


1 Box of Spice Cake Mix

1 Can of Pumpkin Puree


Preheat oven to 350 degrees. Mix the two ingredients together in a large mixing bowl. Place 1-1/2 tablespoons of the mixture in cupcake rounds on a baking sheet. Bake for 20-25 minutes and enjoy!
