Ingredients
  • Turkey
  • 1 turkey breast, boned, skinned and butterflied
  • Cranberry Pecan Stuffing
  • 1/2 cup dried cranberries boiled in water for 1 minute and drained
  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 2 1/2 cups cubed bread
  • 2 tablespoons fresh sage, chopped
  • 1/2 cup chicken broth
  • 1/3 cup chopped pecans
  • Apple Cider Gravy
  • 1 cup apple cider
  • 3 tablespoons red wine vinegar
  • 1 tablespoon corn starch
  • 1/2 onion, chopped
  • 1/2 cup chicken broth
Instructions
  1. Preheat oven to 375 degrees.
  2. Pound the turkey breast until it is about 3/4 inch thick and set aside.
Cranberry Pecan Stuffing
  1. Add the oil and onion to the pan and cook for 4 minutes.
  2. Add the garlic, bread, sage, pecans and chicken broth.
  3. Stir and cook on medium heat until most of the liquid is gone.
Turkey Roll
  1. Salt and pepper both sides of the turkey.
  2. Cover with the stuffing leaving 1 ½ inch clear on all sides.
  3. Start at the long end and roll the turkey and stuffing.
  4. Tie with two pieces of cooking twine.
  5. Add the turkey roll to a Dutch oven. Brown on both sides.
  6. Cover and bake at 375 degrees for about an hour.
Apple Cider Gravy
  1. Add onion, apple cider, red wine vinegar and cornstarch (mixed with a little water) to the pan and cook until slightly thickened.
  2. Garnish with sage and whole pecans.
