'Eggcelent' Sweet Potato Kale Frittata

Referred to a the “Italian version of an omelette”, frittatas are cooked in a skillet, browned on the bottom on the stove-top, then baked in the oven. Try this yummy recipe, then experiment on your own using different ingredients your family loves.

As the weather changes, so do our spaces in which we spend family time — transitioning to the warm outdoors. And what better way to celebrate spring than by serving this healthy and delicious Sweet Potato Kale Frittata for brunch. Frittatas are an easy meal option as they are cooked in a cast iron pan or oven-safe skillet, starting on the stove-top and then finished in the oven. And, unlike omelets, frittata fillings are mixed in with the eggs in the pan rather than folded in the center. Easy peasy!

Ingredients
  • 6 large eggs
  • 1 cup half-and-half
  • 1 teaspoon kosher salt
  • 1/2 teaspoon Freshly ground pepper
  • 2 cup sweet potatoes diced, 1/2 inch cubes
  • 2 tablespoon olive oil
  • 2 cup firmly packed chopped kale
  • 1/2 small red onion
  • 2 clove garlic
  • 3 ounce goat cheese

Ingredients
  • 6 large eggs
  • 1 cup half-and-half
  • 1 teaspoon kosher salt
  • 1/2 teaspoon Freshly ground pepper
  • 2 cup sweet potatoes diced, 1/2 inch cubes
  • 2 tablespoon olive oil
  • 2 cup firmly packed chopped kale
  • 1/2 small red onion
  • 2 clove garlic
  • 3 ounce goat cheese
Recipe Instructions
  1. Preheat oven to 350 degrees F. Whisk together eggs and next 3 ingredients.
  2. Sauté sweet potatoes in 1 tablespoon hot oil in a 10-inch ovenproof nonstick skillet over medium heat 8 to 10 minutes or until potatoes are tender and golden; remove and keep warm. Sauté kale and next 2 ingredients in remaining 1 tablespoon oil 3 to 4 minutes or until kale is wilted and tender; stir in potatoes. Pour egg mixture evenly over vegetables, and cook 3 more minutes. Sprinkle egg mixture with goat cheese.
  3. Bake at 350 degrees F 10 to 14 minutes or until set.
