    Roasted Red Pepper Hummus

    Ingredients
    • 1 15 ounce can chickpeas (garbanzo beans) rinsed and drained
    • 1 4 ounce jar roasted red peppers drained
    • 2 tablespoons freshly squeezed lemon juice
    • 2 cloves garlic peeled and minced
    • 2 tablespoons tahini
    • 2 tablespoons extra virgin olive oil
    • 1/2 teaspoon salt
    • 2 tablespoons water
    • 1/2 teaspoon crushed red pepper flakes (optional)
    Instructions
    1. Add chickpeas, roasted peppers, lemon juice, garlic, tahini, olive oil, salt and water to a blender or food processor. If desired, add a half teaspoon of crushed red pepper flakes for spice.
    2. Blend in 20 second pulses, mixing frequently to ensure all ingredients are blended.
    3. Sprinkle with paprika and garnish with a red pepper before serving.
    4. Refrigerate tightly covered for up to a week.
