    Ingredients
    • 1 10 ounce package of frozen spinach, thawed and squeezed dry. You can also use a large bag of fresh spinach wilted in the microwave.
    • 4 egg whites
    • 1/4 cup fresh chopped basil
    • 1 cup gluten-free bread crumbs or bread crumbs
    • 1/2 teaspoon garlic powder
    • 1/2 cup grated Parmesan cheese
    Instructions
    1. Preheat oven to 350°
    2. Add all the ingredients to a medium size bowl. Mix with a spoon and your hands to blend.
    3. Form the spinach mix into small balls and place on cookie sheet lined with parchment paper.
    4. Bake for 15-20 minutes or until golden brown.
    5. Top with a little Parmesan cheese. Serve plain or with a favorite dip.
