    Ingredients
    • 3 tablespoons olive oil
    • 1 small butternut squash skinned and cubed
    • 3 garlic cloves minced
    • 1 onion
    • 1 pound Italian sausage
    • 1 18 ounce jar tomato sauce
    • 1 teaspoon oregano
    • 1 teaspoon basil
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1/2 cup Parmesan cheese (optional)
    Instructions
    1. Preheat oven to 350 degrees.
    2. Peel and cut the butternut squash into small pieces.
    3. Add olive oil to large frying pan.
    4. Add garlic, onion and Italian sausage and cook until sausage is brown. Add spices.
    5. Layer the lasagna in an oblong 5X8 inch baking dish, starting with the tomato sauce.
    6. Put a final layer of tomato sauce on top and bake for 50 minutes.
    7. Add Parmesan cheese to the top and bake until melted.
