  • 1 muffin whole wheat
  • 2 tablespoons shredded Italian cheese blend

Recipe Instructions
  1. Preheat oven or toaster oven broiler.
  2. Coat a small nonstick skillet with cooking spray and heat over medium-high heat.
  3. Add egg and cook, stirring often, until set into soft curds, 1 to 2 minutes.
  4. Spread marinara sauce on English muffin halves.
  5. Top with the scrambled egg, cheese and pepperoni, and broil until the cheese is melted, 1 to 3 minutes.

Recipe Instructions
  1. Pour granola into a very shallow dish or plate.
  2. Peel bananas, cut in half and insert Popsicle sticks.
  3. Dip into yogurt (or coat with a knife), then roll into granola and add-ons.
  4. Place on a parchment or wax-lined tray and freeze.
  5. Keep uneaten pops in the freezer.

  5. Microwave on high 90 seconds.

  1. Place baking rack in middle of oven and preheat to 425 degrees.
  2. Spray a muffin tin with cooking spray.
  3. Cook bacon for 5 minutes in a 12-inch heavy skillet over medium-high heat.
  4. Add onions and cook until translucent, 5-7 minutes.
  5. Put 1 tablespoon of the onion mixture into each muffin tin.
  6. Whisk together eggs, cream, milk, cheese and salt and pepper and pour over onion mixture.
  7. Bake until muffin tops are golden and custard is set in the center, 20 to 25 minutes.
  8. Cool slightly before removing from the pan.

  2. Microwave frozen vegetables for 3-4 minutes, or until thawed. Squeeze dry.
  3. In a large bowl, beat eggs until foamy. Add veggies, 1/4 cup cheese, salt and pepper. Stir until well combined.
  4. Divide egg mixture into 10 muffin molds. Fill about 3/4 full. Top with remaining 1/4 cup cheese.
  5. Bake for 20-25 minutes, or until eggs are set and slightly browned on the top. Remove from the oven and let cool until able to handle.
  6. Remove by sliding a knife between the egg and the muffin tin to loosen frittata.
  7. Enjoy warm!

  1. Unroll crescents onto a large ungreased cookie sheet.
  2. Place a spoonful of scrambled eggs, a few pieces of ham and a sprinkle of shredded cheese on the wide end of each unrolled crescent.
  3. Roll up each crescent, starting at the wide end of the crescent and ending at the narrow end.
  4. Bake at 375 degrees for 11-13 minutes, or until crescents are golden.
  5. Optional: Serve with salsa for dipping.
