Pretty in Pita: Easy, DIY Pockets for Picnic Season

Summertime means more trips to the lake, more family picnics and more delicious meals on the go — plus Artown events are plentiful throughout July! These two easy pita pocket recipes will satisfy you and the little ones as you munch your way through Artown events and fun.

If you want something nutritious and easy to make and pack in a cooler for one of the many Artown events this month or other summertime fun, try stuffing a whole wheat pita with your favorite ingredients. They are also easy for kids to eat.

We have two suggestions here, but the options are endless when it comes to filling pocket bread with healthy food. Bon appétit!

Chicken, Spinach and Feta Pita

Ingredients
  • 2 whole wheat pita pockets
  • 2/3 cup cooked chicken
  • 1/3 cup fresh spinach
  • 1/4 cup feta cheese
  • 1 green apple, sliced
  • dried cranberries
  • balsamic vinegar (optional)
Instructions
  1. Slice whole wheat pita pocket in half.
  2. Take one half of pita pocket and stuff with spinach, 1/3 cup chicken, 2-3 slices of green apple and top with dried cranberries and feta cheese.
  3. Optional: Drizzle with balsamic vinegar.

  • 1 sliced banana
  • 4-6 sliced strawberries
  • honey (optional)
Instructions
  1. Slice whole wheat pita pocket in half.
  2. Take one half of pita pocket and spread peanut butter on the inside.
  3. Stuff with banana and strawberry slices.
  4. Drizzle with honey (optional).
