If you’re a fried chicken lover, you know there’s nothing quite like that first crispy bite into a juicy drumstick. For many, however, fried chicken may only be a twice-a-year treat— it’s loaded with high sodium, calories and fat. That’s not the case in this recipe for healthy (and gluten-free) fried chicken.

Ingredients
  • 1 tablespoon coconut oil
  • 2 large chicken breasts
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 2 med or large eggs
Instructions
  1. Preheat oven to 350 degrees.
  2. Crack eggs into a bowl and whisk until smooth.
  3. Mix seasonings on a plate with the coconut flour.
  4. Dip chicken into egg wash so it's fully covered.
  5. Then place the chicken into seasoning and flour mix. Coat well.
  6. Heat a large frying pan to medium heat.
  7. Add coconut oil and let it heat up for a couple of minutes.
  8. Pull the chicken from the pan and add to a cooking sheet.
  9. Bake at 350 degrees for 10 minutes.
  10. Garnish with a sprig of freshly chopped parsley or cilantro.
Recipe Notes

If you prefer not to egg wash your chicken, you can use a light spread of original flavored Greek yogurt to help bind the seasoned flour mix to the chicken.

Try other natural flours, like almond flour or garbanzo flour, for varied flavor, but get the same healthy results.
