Ingredients
  • 1 medium zucchini grated
  • 1 small small carrot grated
  • 1/2 cup red bell pepper chopped
  • 1/2 cup corn kernels
  • 1 tbsp parsley chopped
  • 1/4 cup Parmesan cheese grated
  • 2 large eggs
  • 1/4 cup whole-wheat flour
  • 1/2 cup olive oil for frying, more if needed

Ingredients
  • 1 medium zucchini grated
  • 1 small small carrot grated
  • 1/2 cup red bell pepper chopped
  • 1/2 cup corn kernels
  • 1 tbsp parsley chopped
  • 1/4 cup Parmesan cheese grated
  • 2 large eggs
  • 1/4 cup whole-wheat flour
  • 1/2 cup olive oil for frying, more if needed
Recipe Instructions
  1. Place carrots and zucchini on clean cloth and squeeze water out of them and place in a mixing bowl.
  2. Add peppers, corn, parsley and Parmesan cheese and mix until combined.
  3. Add in eggs and mix well. Finally, add flour and mix until combined.
  4. In a large frying pan, heat olive oil on medium to low heat.
  5. Fill up an ice cream scoop with the mixture and drop into the pan. Flatten slightly with a fork. Fry for about 3 to 4 minutes on each side.

  1. Looks delicious! Wouldn't 1/2 cup if red pepper be too spicy for kids? Also, the recipe does not tell how much parmesan to use.
