  • 1 pound cod filets cut in to small pieces
  • 1 cup coconut flour
  • 3 eggs beaten
  • 1 teaspoon salt
  • 1 cup panko bread crumbs

  • 1 pound cod filets cut in to small pieces
  • 1 cup coconut flour
  • 3 eggs beaten
  • 1 teaspoon salt
  • 1 cup panko bread crumbs
Recipe Instructions
  1. Preheat oven to 400 degrees.
  2. Line up three small bowls. Add flour to first one, eggs to the second and bread crumbs to the third .
  3. Dredge the cod pieces beginning with the flour, then the eggs and bread crumbs (using one hand for the dry-ingredient bowls, and a different hand for the egg bath).
  4. Sprinkle with salt.
  5. Add the cod to a wire rack sprayed with oil and place in a roasting pan.
  6. Bake for 8 minutes.
  7. Turn the fish over and bake another 6 minutes.
Recipe Notes

Serve with tartar sauce, ketchup or your favorite dipping sauce. To make this recipe gluten-free, replace the panko breadcrumbs with gluten-free breadcrumbs, found at most food markets.
